Masala Lentils

Today's blog post is inspired by our recent trip up to Portland, Oregon where we ate at The Sudra, a vegan indian restaurant http://thesudra.com/.

To start I chopped up an onion, celery, butternut squash, zucchini, and I threw in some baby carrots. Then, I added the lentils, some salt and pepper and better than bouillon chicken stock and some Patak's Tikka Massala Curry paste. I also added two bailey leaves. Amazing!

Everything into the pressure cooker. Once the pressure is up I turned it down to low for 20-25 minutes.

Tikka Masala Lentils are ready! Yum yum!
